Gluten free banana & nut loaf

I made this cake yesterday for my father. He's my guinea pig for my cakes and biscuits. I added cinnamon and pine nuts to the recipe.

I had a slice and it was delicious. Moist and tasty.
 
  • 175g (7oz) Juvela Gluten-Free Fibre Mix
  • ¼ tsp bicarbonate of soda
  • 75g (3oz) butter
  • 150g (6oz) caster sugar
  • 2 medium eggs, lightly beaten
  • 4-5 medium bananas, mashed
  • 100g (4oz) chopped mixed nuts (optional)

Instructions

  1. Before you start, preheat the oven to 180ºC/350ºF/Gas Mark 4 and grease and line a 2lb loaf tin. 
  2. Place all the ingredients in a bowl and beat together until thoroughly combined.
  3. Place the mixture in the prepared tin and bake for 45 mins-1hr, until well risen and firm to touch. Allow to cool on a wire rack. 

Gluten intolerance

Gluten sensitivity (also gluten intolerance) is a spectrum of disorders, including coeliac disease and wheat allergy, in which gluten has an adverse effect on the body. Symptoms include bloating, abdominal discomfort or pain, diarrhoea, muscular disturbances and bone or joint pain. It can also cause other unexpected symptoms such as headaches and vertigo, among many others.
Gluten gives elasticity to dough helping it to rise and to keep its shape. It is found in many staple foods in the Western diet. It is a protein composite found in wheat and other grains, including barley and rye and processed foods thereof. Gluten is composed of a gliadin fraction (alcohol soluble) and a glutenin fraction (only soluble in dilute acids or alkali). Gluten is not naturally occurring in cornrice, or oats, but may be cross-contaminated by facilities that also process wheat, barley, or rye products.

My father was recently diagnosed with coeliac disease. He was 76 years old. This disorder can effect any age or gender. The symptoms could be in adults one or more of the following:
  • unexplained iron-deficiency aenemia
  • fatigue
  • bone or joint pain
  • arthritis
  • bone loss or osteoporosis
  • depression or anxiety
  • tingling numbness in the hands and feet
  • seizures
  • missed menstrual periods
  • infertility or recurrent miscarriage
  • canker sores inside the mouth
  • an itchy skin rash called dermatitis herpetiformis
Symptoms of coeliac disease vary from person to person. Symptoms may occur in the digestive system or in other parts of the body. Digestive symptoms are more common in infants and young children and may include
  • abdominal bloating and pain
  • chronic diarrhoea
  • vomiting
  • constipation
  • pale, foul-smelling, or fatty stool
  • weight loss
